45-Minute Baby Back Ribs {Instant Pot}

For those of you in the pressure cooker (I own an Instant Pot) world, you have got to try out these baby back ribs (full slab) that are done in 45 minutes (I’m accounting for the NPR -natural pressure release).  I have never once boiled or baked my ribs and always done on the smoker.  They turned out amazing but come on, I really don’t have 4 hours to burn some weeknights on dinner.  Maybe I’m a last minute dinner-thinker too. Who knows! Regardless, I picked up a pack of ribs, went home and had these done from start to finish in less than an hour!

Ready for the simple step-by-steps?

Step 1:  Add 1 cup of apple juice to the bottom of the pot.  If you don’t have apple juice you can use another juice. I actually used white grape on my very first time making these and they were just as delicious.

Step 2:  Place trivet on bottom.

Step 3:  Remove the silver skin from the back of the ribs.  This is the piece of skin on the back side of the ribs.  You can easily put your knife under the skin and make a tear.  The skin will then just pull off it. It’s way easier than you think.

Step 4: Add salt and pepper to the raw ribs and curl up in Pressure Cooker. If your ribs are huge, you can even cut them in half to make them fit in the Instant Pot. If you’d like to add a rub, go ahead. I choose not to because the flavor is more than there with just salt and pepper and apple juice.

Step 5: Push MEAT button on the Instant Pot and adjust time to 25 minutes. After the 25 minutes is up, allow for a natural release for at least 15 minutes. (That means don’t open the lid until 15 minutes has passed and then you can release the rest of the pressure in the pot)

Step 6:  Place the ribs on a piece of foil on a baking sheet.  Coat with homemade or store bought BBQ sauce of your choice.

Step 7:  Place under the broiler set on high for about 5 minutes.

Let the ribs sit, uncut for about 5 minutes (if you’re patient) and then dig in.
