Pressure Cooker Greek Yogurt

I have become a creature of habit when it comes to using my Instant Pot.  If you have never used or seen one of these then you’re in for a treat.  My Instant Pot NEVER leaves my counter because I am always using it.  I use it so much that I sort of got a 2nd one.  I guess you could say I’m in it!

One of the newest foods I like to make in my Instant Pot is yogurt.  Sure it may take more time than I want but it’s so worth it AND I sleep while it’s incubating anyways so it’s a win-win!  I have never really need a Greek Yogurt kind of girl until I started making this in the pot. I actually make a whole batch and make half greek and half regular.

This is where the magic happens!!

I used only four ingredients to make my yogurt. I, too, thought this was too good to be true but it happened.  Well…it happened the second time I tried it. The first time I failed and it was still complete liquid.  Say what? I failed?

I started by adding 1 gallon of whole milk to the Instant Pot (but you can use 2% too).  I clicked the yogurt button and waited for the cycle to complete.  Once completed, I took the temperature of the milk.  You want it to be at 180°F.  If it’s not 180°F and repeat the cycle again.  If you’re impatient like me and want the milk to come to temperature a little faster, insert your thermometer and click the saute button on your pot.  If you choose to do it this way, you’ll need to pretty much hover over top of it whisking to make sure the milk does not burn on the bottom of the pan. (I did it this way because I seriously didn’t have time to wait for the cycles to complete.)

Once the milk reaches 180°F, remove the liner of the pot and place on a trivet. Caution..it’s hot!

Let the milk cool to 110°F before adding your starter (already made yogurt).  You can add anywhere from 2 T to a 5.3 oz cup of yogurt.  I then added in 1 cup of Stevia and  2 tsp vanilla.

Put the liner back in the Instant Pot and click the yogurt button and adjust the time to 8 hrs.

Once the timer goes off you can strain your yogurt in the refrigerator to separate the whey.  I used cheesecloth but I am done with that…it’s too expensive so I bought some larger coffee filters for my next time making yogurt.

Now go enjoy your yogurt!!  You can eat the yogurt without straining as well.  Your choice.

Beware though..I am going to be using some of this Greek yogurt to make a cheesecake so stay tuned!
