Amish Country Peanut Butter Pie Recipe

Let me just tell you that I thought making this peanut butter pie that I get when I’m in Amish Country was kinda of not attainable.  Yeah…as much as I will continue to get ONE slice when I go there, I also found that it’s totally possible to make it at home as well.  And may I add, that when I don’t have to drive 90 miles to get this peanut butter pie, it makes the pie even better.  If you’ve ever eaten this pie at Amish Country and wanted to bring a whole one home, next time try this recipe instead and let me know how you like it.  The hubs just asked if I thought he could get away eating a piece for breakfast. I made sure he knew there was protein in the peanut butter. (He didn’t eat though!)

Now you can start out by making your own pie crust.  I didn’t. I am not a great pie crust maker so I am leaving that to the pros and I purchased a 2 pack (cause you know there will be a 2nd one made in the near future) of frozen pie crusts that I just needed to pop in the oven and bake. So that’s the first step.  Bake your homemade or pre-made pie crust until done.

While the crust is baking in the oven you have plenty of time to make your three items for the pie.  You’ll find the exact ingredients at the bottom but it’s peanut butter, confectioners sugar, vanilla pudding and whipped topping.  My girl wanted to help me make the whipped topping (the whisk ended up on the floor so she got downgraded to a spoon.  What happens when you have a spoon?  You EAT things.  Mistake #1)

Next, take that cooled pie crust and add almost half of the crumbled peanut butter/sugar combination that you made.

Directly on top of the peanut butter mixture, spoon in your prepared pudding mix.

Then take the 2nd half of the peanut butter mixture (reserve a couple of tablespoons) and add to the top of the pudding mixture.

Top with homemade whipped cream or a frozen but thawed topping and the reserved peanut butter crumble.

Instructions
  1. Bake or prepare pie crust according to package.
  2. While baking in oven, cream together peanut butter and 1 cup confections sugar. You can either use a fork or hand mixer until the mixture becomes crumbly and resemble pea sizes. Reserve 2 TBS for topping.
  3. In another bowl, add vanilla pudding mix with 2 cups of milk. Mix for 2-3 minutes until mixture becomes creamy and thick.
  4. In a third bowl, mix heavy whipping cream and confectioners sugar with mixer until the cream resembles stiff peaks. You can also use a bowl of frozen whipped topping like Cool Whip, thawed.
  5. When pie crust is cool, add in 1/2 peanut butter crumble mixer on top of crust followed by all of the pudding mix and then on top of pudding add remaining peanut butter crumbles, reserving 2 TBS for garnishing.
  6. Top with whipped topping and sprinkle reserved peanut butter topping.
  7. Chill before serving and then chill uneaten pie in refrigerator until gone.
