Banana Pepper & Tomato Meatballs {Instant Pot Recipe}

I have another Instant Pot recipe for you here (it actually could be made easily in a crock-pot too for a few hours).  Today I made meatballs in my Instant Pot and these were a bit different from the normal recipes you see.  I know you usually see these with BBQ sauce and grape jelly BUT I made mine with mild banana peppers and tomatoes from a can. This may sound a little odd but it was a amazing. I’ll give a shout out to my Uncle Terry for this inspiration.  Now it’s my job to talk him into getting an Instant Pot.

I don’t like tomatoes at all.  If I see chunks I pick out so I did the next best thing.  In my Ninja (or food processor would work well too), I blended up these three things.  When it was smooth, I dumped the sauce into the inner liner of my Instant Pot.

I then added in my meatballs. I usually do fix my own from scratch but this time it just didn’t happen.  I added a couple of small packages of frozen meatballs that I had hanging out in my freezer and pressed the manual button, sealed the pot and adjusted the time to 6 minutes.

This will take a few minutes for the pot to come to pressure since the meatballs are frozen.

When the time went off I did a quick release. It smelled so good that I didn’t have the patience for a natural pressure release.

These meatballs are great on mini slider buns or just to eat like they are as an appetizer.  It’s definitely a great party food!

Instructions
  1. In a food process or blender, blend the banana peppers (juice included) and diced tomatoes.
  2. Pour into the inner liner of your Instant Pot or pressure cooker. On top of sauce, add your frozen meatballs.
  3. Put the lid on your pot and seal. Click manual and adjust the time to 6 minutes.
  4. When timer goes off, do a quick release.
