Beef and Broccoli Recipe over Rice – Instant Pot Recipe

It seems like flank steak has been staring me down each and every time I’m at the grocery store.  Because of this, it’s time to pull out the Instant Pot and make some beef and broccoli for dinner.

I own two Instant Pots. One could say I’m obsessed while I tend to just say that I am smart.  I make this entire meal in my Instant Pots.  I do prefer to cook my broccoli separately in the pot for 2 minutes.  Find out HERE how I do it and it comes out perfect every time. If you don’t like your quite as soft, I recommend you changing your time to 0 minutes.  Trial and error!

Then for the rice, I also make this using my Instant Pot.  I clean my rice THOROUGHLY (if not I will catch hell-o from the husband).  I rinse about 5-6 times to release as much starch as possible. Rice is a 1:1 ratio so in this recipe I use 1 1/2 cups rice so I will add 1 1/2 cups water.  I then add 1 tsp salt and 1 tsp of butter.  You’ll then close the pot and hit the rice button (10 min) and walk away. Once the time has gone off, do a quick release. Release that pressure and open it up to PERFECT rice.

  1. Push the saute button on the Instant Pot and allow for the inner pot to become hot. While the pot is getting hot, thinly slice your flank steak and season with salt and pepper.
  2. Add steak into the pot in batches making sure to not crowd the pot. Cook for 2-3 minutes stirring when one side gets browned. Removed seared steak and add in additional meat.
  3. When all steak has been seared and removed, add in chopped onion and allow to saute for about 2 minutes. Add in garlic and ginger and saute an additional 1 minute.
  4. Add beef broth, soy sauce, brown sugar, sesame oil, and red pepper flakes. Stir until brown sugar has dissolved. Once dissolved, press cancel on the Instant Pot.
  5. Add beef back to pot. Close lid and seal pot. Push manual pressure and adjust time to 12 minutes. When done, allow for a 5-7 minute natural pressure release then release any remaining pressure in the pot.
  6. In a small separate bowl, combine the 3 TBS of water and cornstarch by stirring.
  7. Push saute button on pop and allow for the sauce to thicken. After about 1 minute, add the broccoli florets and allow for them to cook to your liking. (You can also cook broccoli in Instant Pot for 2 minutes on manual pressure and do a quick release)
  8. Serve over rice.
