Instructions
  1. Press the saute button on the Instant Pot. When the pot reads HOT, add in EVOO and ground chicken. Break chicken apart and allow to saute for about 3-5 minutes.
  2. While chicken is sauteing, chop vegetables and garlic. After the 3-5 minutes, add in vegetables and allow to saute for at least 5 minutes.
  3. Once done, add in seasonings (salt, pepper, paprika, garlic and bay leaf) and stir. Add in chicken broth, hot sauce and tomato sauce and stir.
  4. Close the lid and seal valve. Press the soup button and adjust time to 14 minutes. Allow to come to pressure and cook. When timer goes off, quickly release pressure.
  5. Stir in drained and rinsed Great Northern beans. Allow for beans to sit in pot a couple of minutes before serving.
  6. Serve with rice or tortilla chips.
