Chocolate Peanut Butter Banana Bread

It’s super duper cold here in Ohio this week so it was time for some comfort food. But this comfort food was banana bread – well sort of. I have a crazy amount of boxed cake mixes in the house from a previous sale and I needed a way to use some.  This is perfect; simply perfect.

Put that kiddo to work mashing the bananas.  This is one of the most favorite things for my little to do. She does a great job and continues until they are mashed perfectly.

You may have all the ingredients to make this besides the peanut butter chips so head to the store and I’ll wait on you…

Do you ever get in the mode where you don’t want to make everything from scratch and would rather have some help from the grocery store?  If so, this is for you and you’ll LOVE it. It’s moist, rich and delicious.

This can also be made into muffins but I like loaf pans simply because it’s less work and some days I need so much less work (especially with a 1 year old).

Instructions
  1. Preheat oven to 350°F.
  2. In a large bowl, mash bananas. When mashed, add in water, eggs, oil and stir. Once combine, mix in boxed cake mix and whisk.
  3. Add peanut butter chips and fold into the cake mixture.
  4. Divide the batter evenly into two loaf pans.
  5. Bake for 40-50 minutes or until a toothpick comes out clean.
