Ham and Scalloped Potatoes Recipe

I had a ham steak calling my name to be used up so I decided to whip up a simple ham and scalloped potatoes recipe for dinner. It may have been easy but it was really good.  If you have these ingredients on hand and want to make a simple dish, make sure to add this to your weekly menu.  Do you have a weekly menu?  I have noticed that having one keeps me out of the grocery store. That means I go only 6 days a week instead of 7.  Gahhhhh…

For the potatoes, you really do want to make sure that you cut them super thin because if not they will be in the oven for hours and this isn’t a dish that you want to have in there that long.  To do this you can either use a mandolin or a knife. I vote for a mandolin because for one you get even cuts and for two it takes way less time.  I used a hand-held mandolin but the box ones will work great too.

Once you’ve cut your potatoes and diced your ham then you’re ready to go. It’s a little like a layering lasagna effect but only two layers so it won’t take that long before it gets in the oven.

  1. Preheat the oven to 375°F.
  2. Add the butter and onions to a large skillet over medium heat and saute until starting to soften, 3 to 4 minutes. Sprinkle the flour over the onions and whisk them together. Continue cooking the onion/flour mixture until golden brown, about 2 minutes. Stir in the half-and-half and milk and whisk around, allowing the mixture to thicken; this will take 3 to 4 minutes. Add some pepper, stir the sauce, reduce the heat and keep warm.
  3. Slice the potatoes really thin using a mandolin or a really sharp knife, the thinner the better. Generously butter a 2-quart baking dish, then add half the sliced potatoes and half the diced ham. Sprinkle on half the cheese then pour on half the sauce from the skillet. Repeat with the rest of the ingredients, ending with a layer of cheese and sauce. Sprinkle extra pepper on top.
  4. Cover the dish with foil and bake it for 60 minutes, then remove the foil and bake until the cheese is golden brown and the sauce is bubbling, an additional 30 minutes.
