Instant Pot Meatloaf and Mashed Potatoes (all in one pot)!!

Instructions
Potatoes
  1. Clean and cut potatoes into half or fourths and place in the bottom of the inner pot in your Instant Pot. Season with salt and pepper and add in 1 cup of water.
  2. Place trivet that came with the Instant Pot on top of potatoes and then make a foil sling to go on top of the trivet for the meatloaf to go on. (This will allow the juices to stay with the meat and not go on the potatoes)
Meatloaf
  1. Place ground beef into bowl. Chop the green pepper and onion finely and place in bowl. Add in seasonings (salt, pepper, onion powder, garlic powder, oregano).
  2. Add in bread crumbs and egg and mix well.
  3. Form into a loaf and place on top of foil sling that is on top of trivet.
  4. Close the Instant Pot lid, seal the valve and press the Meat/Stew button. Adjust the time to 25 minutes.
  5. When the timer goes off, allow for a 10 minute natural pressure release. This means that when the timer goes off, you allow the pot to release some of the pressure on it’s own and then after 10 minutes vent the remaining pressure before opening.
  6. When pressure is released, open the lid and remove the meatloaf. Place on a baking sheet lined with parchment paper or foil and turn the broiler on. Mix together ketchup, mustard and brown sugar and spoon on top of the meatloaf. Place under broiler for about 5 minutes.
  7. When done, remove from oven and slice to serve.
Making Mashed Potatoes
  1. Drain all liquid from potatoes and place dried potatoes back into pot while still on “Keep Warm” function. Add in cream cheese, butter and half and half and mash with potato masher. Season with additional salt and pepper as needed.
