Instant Pot Sloppy Joes – Perfect weeknight meal!!

This has to be one of my favorite sandwiches. But really, no cans of sauce go into the ground beef to make this.  These are amazing.  Even better I can now make them in my Instant Pot with ease.  Yasss! Now you might think I’m getting carried away using my Instant Pot and I am at times but I really am trying to eat healthier and I’m trying to eat my meals at home almost every night.  Eating out with a 2 year old is stressful. Eating at home with her isn’t (as much)!

I am so excited to teach you how to make delicious Sloppy Joes in practically no time. This recipe makes enough for 4 sandwiches but double or triple this recipe to feed a crowd.  If you want to try out my brioche buns, I have a recipe to use that’s easy and delicious.

Begin by turning your Instant Pot on saute. Wait until the pot reads HOT then add in 1-2 TBS oil and pound of ground beef.  I’m sure you could even substitute ground turkey in this too. I haven’t tried it yet but I may be up for a challenge. After the meat has started to brown add in your chopped pepper and onion and saute together for about 5 minutes. After the 5 minutes, add in garlic and saute for an additional minute.

Now it’s time for the rest of the ingredients. We are seriously almost done!  Begin by adding in your water followed by ketchup, brown sugar, dry mustard, chili powder, red pepper flakes and chili powder. I have done this two ways. I have not stirred the ingredients together and I have stirred the ingredients together. I have found that stirring the ingredients together allows for a much deeper flavor.  Follow my lead and stir.

On top of that, make sure there is nothing stuck to the bottom of the pan. That can cause for the pot to read BURN. I have yet to see this on anything I have created or made but it happens. A lot.

I make my sandwich the boring but delicious way. My husband prefers to “fancy” his up.  He likes to add cheese, pickles and yellow mustard. Really, any kind of mustard works for him.

Instructions
  1. Press saute button in Instant Pot and allow pot to become hot. While doing so, dice green pepper, onions and garlic.
  2. Once pot reads hot, add 1 TBS oil and ground beef to pan. Break apart and allow to brown. After about 2 minutes, add in green pepper and onions and saute all for about 5 minutes. After 5 minutes, add garlic and saute additional minute.
  3. Push cancel on Instant Pot. Make sure nothing is stuck to the bottom of the pot.
  4. Add additional ingredients to pot; water, ketchup, light brown sugar, chili powder, dry mustard, Worcestershire sauce, salt, pepper and red pepper flakes. Stir all ingredients together.
  5. Put lid on pot and seal valve. Press manual/pressure cook and adjust the time to 8 minutes.
  6. When timer goes off, allow pressure to naturally release for about 5 minutes then you can release all remaining pressure.
  7. Open pot and press saute. Allow sauce to thicken before serving. This will take about 5 minutes.
  8. Serve on buns or for a low carb option, try a portabella mushroom.
