Pizza Pot Pies

Oh my word! You’ve probably seen these Pizza Pot Pies featured on a Food Network show from a restaurant based in Chicago, IL.  Since I’m too far away I NEEDED to make this. Yes, I did need to and so do you. These are way simple to make and you’ll love them. You may not make them each and every week but a cheat meal with these pizza pot pies should be made at least once or more during the year.  This is a meal that needs to have people looking over you as you unveil the inside of the dough. It’s that fun!

Start by making your dough.  This is my fool proof dough recipe and will make enough for anywhere between 4-6 pizza pot pies. I made 4 and froze the remainder of the dough.

Spray each ramekin with cooking spray. Into a (6-9 oz) ramekin, add your cheese slices. I chose a mixture of mozzarella and provolone.

On top of the cheese, add sliced mushrooms.

On top of mushrooms, add meat and sauce. I used ground beef and my homemade (secret) spaghetti sauce and then topped with 1 Tablespoon grated Parmesan.

Then the final ingredient is shredded cheese. Any combination works. I used mozzarella.

It’s time to roll the dough, make a circle for the size you need and place on the top of the ramekins.

Brush on garlic olive oil and top with Italian seasoning then bake!

When it comes out of the oven, you’ll flip it upside down and run around the edge of the ramekin with a knife to allow the dough to loosen.  Once you do, the oozy goodness will just fall right out. Seriously..I need EVERYONE to try this!

Pizza Pot Pies
Instructions
  1. Preheat oven to 450°F.
  2. In a small skillet, brown ground beef. Once browned, add in sauce and simmer for about 3-5 minutes.
  3. Grease ramekins with cooking spray.
  4. Cut each piece of cheese in half. Place 4 pieces of each into the bottom of the ramekin as shown above.
  5. Place sliced mushrooms on top of the cheese.
  6. On top of mushrooms, evenly divide the meat sauce and spoon into the dish. Add Parmesan cheese and shredded mozzarella.
  7. Roll out dough and cut a circle shape about the size of a soup bowl. Place over ramekin, pressing down gently but not pressing too hard onto the ramekin itself.
  8. Brush with EVOO and garlic mixture.
  9. Bake for 15-18 minutes. When done, remove from oven and allow to cool for about 5 minutes.
  10. Turn over ramekin carefully on to a plate and use a knife to pull apart the dough . The dough should easily come off and the meat and cheese should fall to the bowl.
