Air fryers are becoming quite popular and I know why. I have had one for about a year and have used it a lot but I am starting to use it more and more. I am pretty sure I have already told you that I was used to buying french fries or frozen potatoes from a bag but I can’t seem to do that anymore. I definitely can’t do it when the taste has no comparison. Today I am talking about seasoned potato wedges. These are really just staple ingredients in my kitchen including the bacon fat. We don’t make bacon often but when we do, the fat is saved and turned into clarified bacon fat. Just store it in the fridge for up to a month and pull out as you need it.
The air fryer does mention little to no oil but for this recipe, I promise you a small amount of bacon fat just adds to the recipe. Trust me?
For the recipe I used 4 medium sized russet potatoes. Clean the potatoes and cut each potato into 8 wedges and place into a bowl large enough to stir ingredients. Add in the seasonings (smoked paprika, chili powder, salt, pepper and bacon fat) and stir to combine.
Place into you air fryer and adjust the temperature to 400°F and “fry” for 18-20 minutes. Halfway through the process it is important that you open the basket and shake. No worries, the air fryer should remember your time and temperature as long as you do this quickly.
