Begin by making guacamole. Mash together avocado, lime juice, minced garlic, jalapeno, cumin and sriracha. Set aside and allow for flavors to combine.
In the mean time, in a small skillet add EVOO to skillet and add chopped onions to skillet. Saute for 2-3 minutes. When they start to become translucent add in shredded pork. Stir together and saute for an additional 2-3 minutes.
Butter unsalted bread and place butter side down. Place one piece of cheese on side of one piece of bread (unbuttered side). Top with sriracha guacamole, then top with pulled pork and top with another piece of cheese. Top with another piece of buttered bread.
Place in skillet and cook for 2 minutes (or until the bread is golden brown on medium-low temperature. Flip and allow the other side to get golden brown. You may cover with a lid to ensure the cheese melts completely.
