Cinnamon Roll Pancakes Recipe

Pancakes for breakfast anyone?  Not just any original pancakes.  Cinnamon roll pancakes!  I sometimes get tired of the same ole’ pancakes so I wanted to change our breakfast up this morning. It was delicious and I can’t wait to make them again.

You can either use a boxed mix for the pancakes or make your own.  I will give you a recipe for what I use. The cinnamon mixture is where the flavor is really added.  I actually made the mixture as you’ll see in the recipe below and then put in a plastic storage bag. (easy clean up is what I’m about)  Then cut a small hole on a bottom corner and you’ll be on your way to homemade cinnamon roll pancakes.

I had my helper on the cinnamon mixture duty today.  I’m pretty sure she drank her milk the whole time she stirred the cinnamon and butter.  No fear I took over!

I do recommend that you cut a small hole though.  If you cut a big hole the chance of you using all the “swirl” on one pancake is quite high. 🙂 Lesson learned!

Instructions
  1. In a separate bowl, stir together butter, brown sugar, and cinnamon. Transfer the mixture to a storage bag and set aside.
  2. In another bowl, whisk together flour, baking powder, and salt. Once incorporated, whisk in the milk, egg, and oil and stir until all is incorporated.
  3. Heat a large, nonstick skillet over medium heat, and spray it with nonstick spray. Pour 1/2 cup to 1 cup of batter into the pan and help form the batter into a circle.
  4. Cut the corner of your storage bag of cinnamon filling. When the pancake starts to form bubbles, it's time to add the cinnamon swirl. Start in the middle of the pancake and make a swirl to the outside.
  5. Once you've added the swirl, cook an additional 1-2 minutes. Flip and allow the other side to cook, about 1 minute. When done, flip with swirl side up on plate.
  6. Drizzle with glaze or syrup. Glaze can be made from powdered sugar and very small amount of milk.
