Warm Red Skin Potato Salad Recipe

This is my ABSOLUTE FAVORITE potato salad in the history of EVER.  I do like the traditional..well, kind of but not like this one. This is AMAZING.  So if you have a husband like mine that likes to make you warm skin potato salad whenever you’d like then have them make this one.  Then let me know what you think!

Begin by putting water on to boil on the stove.  Then begin cutting the potatoes into about 1 inch cubes (the more uniform in size the better).  Once the water comes to a rapid boil, add salt and then add potatoes and allow to boil for 7 minutes.  Once the 7 minutes is up (use that timer) remove from stove and drain.

You want the red skin potatoes to be warm so as soon as it’s drained, place in a bowl and add chopped green onions, dill, pepper and mayonnaise.

Gently fold in the mayonnaise and seasonings to not break or mush the potatoes.

Warm Red Skin Potato Salad Recipe
Instructions
  1. Add water to pan on stove to boil. Once the water has come to a boil, add salt to season and flavor potatoes.
  2. While coming to a boil, clean and cut red skin potatoes into 1 inch uniform pieces.
  3. When the water has come to a rapid boil, add potatoes and boil on high for 7 minutes. Once the time has gone off, turn off the heat and drain water. Place cooked potatoes into a bowl to dress.
  4. Add in chopped green onions, dried dill, mayonnaise and pepper to taste. (We have found that it does not need extra salt but add if you do)
  5. Fold in mayo and seasonings so you don't mush potatoes.
