Mini Corn Dog Muffins – Kid Approved!

We made some Instant Pot Chili for dinner this weekend (recipe coming soon).  It was amazing and we always need cornbread.  Have you tried my bacon cheddar chili cornbread muffins? If not, those are my favorite.  These mini corn dog muffins are yummy too and TOTALLY kid friendly which in my eyes is just as good.

I used a box of honey cornbread mix.  I actually always have a box or two of these on hand at all times.  We eat soup so much that I love to just whip up a quick box.  And they are cheap too. Winner, winner!

You’ll start by making the box of cornbread mix according to package.  This just takes milk (I use unsweetened almond milk but any will work), oil and an egg.

Spray each hole with cooking spray. Don’t forget that step. 🙂 I used a 5 cm cookie scoop from Pampered Chef to scoop the batter into each mini muffin tin hole. That’s all it took. One scoop.  There are so many different brands to choose from and I am sure they all work just as well if not better.

The next thing you’ll do is cut up your hot dog into 4 equal pieces. You know it’s not rocket science so I won’t go into that much detail.  But if you need help, you’ll start by cutting the hot dog in half and then cut the halves into halves.  There for equal parts.

I wanted my hot dog to muffin ratio to be pretty similar. That’s why I chose the mini muffin tin. Plus I feel I can have more than one and won’t feel guilty.

I own the Rachael Ray 24-cup mini muffin pan. These really do come in handy for many different things so think about grabbing yourself one.

Bake in 400°F oven for 11-13 min.
