I have been fixing my girl quesadillas for a few months now but I just keep fixing her the boring cheese variety. I know, I know…if it ain’t broke, don’t fix it. She is a lover of pizza as well, so why not slap some pizza toppings in between two tortilla shells and call it lunch? Yep, done pizza quesadillas!
On one tortilla shell, I added shredded mozzarella cheese, pepperoni, dry Italian seasoning and Parmesan cheese. I added the second tortilla shell to the top, flipped and let the second side get a little crispy. Took out of pan, cut in wedges and lunch was done…almost. Pizzas have sauce, right? Choose your favorite pizza sauce, homemade or store bought, heat up and there you go.
Lunch is served to my most adorable 1 year old. It has to be normal for every toddler to love the dipping sauce the most, right? That was gone before the first quesadilla triangle was.
