Sausage, Egg and Cheese Breakfast Roll-Ups

I made this simple yet super delicious breakfast this morning because we are on the run and I needed something along with fruit that we could take on the run. That’s where these sausage, egg and cheese breakfast roll-ups came into play.  I had every ingredient in the house included the sausage links so it was a good day.  When I find good deals on food that I don’t buy often or keep in my refrigerated such as sausage links, I stock up and put in my freezer.

It was just as easy as the pictures above look.  Make sure though before you build your crescent rolls that your sausage is fully cooked.  You can either buy fully cooked or do like I did and cook the sausage while you’re preparing the rest of the ingredients. On top of that, you really can choose your favorite cheeses to add to your roll-ups.  I used Muenster and pepper jack; two cheeses that you will ALWAYS find in my refrigerator.

Sausage, Egg and Cheese Breakfast Roll-Ups
Instructions
  1. Preheat oven to 350°F.
  2. Cook sausage links according to package directions or internal temperature reaches 160°F.
  3. In small bowl, beat eggs. Reserve 1 TBS of egg to brush over top of crescent rolls before baking. Use the remaining eggs for scrambling.
  4. Unroll crescent dough from package and separate in to 8 triangles. Cut cheese slices in half; place 1 half on each triangle. Top each with spoonful of scrambled eggs and 1 sausage link. Roll up each triangle and place on ungreased cookie sheet or one lined with parchment paper.
  5. Use the reserved egg to brush on top of crescents then sprinkled with salt and pepper.
  6. Bake 15 to 18 minutes or until golden brown.
